Pork Chops with Brown Butter Mashed Potatoes


Tell me I'm not the only one this happens to. You're sitting down with your small child and realize I have to go use the restroom. So you get up and walk past the kitchen. You look at the clock and realize it's almost time for dance rehearsal which means dinner will be a little later and you don't really want to start dinner when you get home. 
So you wash the potatoes and chop them, put them in water. You shuck the corn and place it in water as well, then take the yummy home grown cucumber you received and the yummy super sweet cherry tomatoes you have chop them up and make a little cucumber salad dressed with a little olive oil and some rice wine vinegar. 
Then you realize the counter is a little dirty so you start wiping it down for the third time today. Next thing you know your 3 month old is hungry again so you get him fed before dance class. You sit through a cute dance class watching your almost six year old (tear) try to pay attention and be good as best she can then turn around and come home to finish the dinner you started before you left. You grill the pork chops on the barbeque, boil the corn and the potatoes...make some crazy good brown butter for them, put everything together on a plate call your 6 year old to the table for dinner and sit down only to realize that you still haven't used the restroom from 3 hours ago...

Yeah that happens to me every day. 

Anyways! Make this it's so good!

Ingredients:
2-3 Large potatoes
Generous handful of salt
1/2 cup milk
Splash of buttermilk
6tbs butter

1. Wash and cube the potato, fill the pot with water and salt and boil until you can pierce a fork through the potato and it starts to soften. Drain the potatoes and place them back in your pot. 

2. Next place the butter in a small sauce pan and turn the heat to medium. Let the butter melt and whisk the butter until it starts to turn brown and little brown bits start forming on the bottom of the pan. Mmmmmm

3. Add both milks and the butter and mash to your desired consistency. Salt and Pepper to taste!

This was so good I am making Mashed Potatoes this way from now on!

The pork chops I just seasoned with a dry rub I had on hand and grilled them. Everything was so tasty!
